Vitamins are the organic compounds required in the diet in small amounts to perform specific biological functions for normal maintenance of optimum growth and health of the organism.
Water soluble vitamins : Vitamin B-complex i.e., $\mathrm{B}_1, \mathrm{~B}_2, \mathrm{~B}_5, \mathrm{~B}_6$ and vitamin $\mathrm{C}$ are water soluble vitamins.
These vitamins must be supplied regularly through diet because tl cannot be stored (except vitamin $B_{12}$ ) in c body, as they are readily excreted throug urine.
Water insoluble, or fat soluble vitamins : Vitamin A, D, E and $\mathrm{K}$ are water insoluble vitamins.
These are soluble in fat and oils. These vitamins are stored in liver and adipose (fat storing) tissues.
